According to Spector, tomatoes can help lower cholesterol, protect the heart, reduce the risk of stroke, and promote healthy skin. He specifically mentioned the presence of lycopene, a polyphenol in tomatoes, that plays a key role in delivering these health benefits.

Spector shared tips on maximising the benefits of tomatoes by consuming them with olive oil. He referenced a study published in the Journal of Nutrition in 2001, which demonstrated a 40% reduction in the risk of erythema, a type of skin rash, among participants who consumed tomato paste with olive oil regularly.

Additionally, Spector referred to a meta-analysis published in Critical Reviews in Food Science and Nutrition in 2019, showing a significant decrease in the risk of stroke, cardiovascular disease, and mortality with a high intake of lycopene from tomatoes. The study suggested that including tomatoes in the diet could lead to notable reductions in cardiovascular health risks.

Contrary to popular belief, Spector advised that tinned tomatoes can be an excellent choice for reaping the benefits of lycopene, even more than fresh tomatoes. He emphasised that the higher lycopene content in tinned tomatoes makes them a valuable addition to a healthy diet.
